Healthy and Tropical
Ever tried mango in a salad? One of my Mum’s go-to starter recipes is a mango, shrimp and avocado salad with lime, coriander, and chilli flakes. It’s fresh, tropical and so delicious! When Florette Salad got in touch for a collaboration, I immediately knew that I wanted to do something a little unusual. Although Florette have plenty of recipes for summer salads on their website, I did my own thing and chose to use mango as my special ingredient. I was inspired by my Mum’s recipe, but used some tasty chicken instead of shrimps and spiced it with cumin instead of chilli.
Mango, Chicken and Avocado Salad
You will need:
- Chicken breast
- One ripe avocado
- One ripe mango
- A bunch of spring onions
- Half a lime
- A handful of salad
- Two tablespoons of olive oil
- A tablespoon of honey
- Cumin
The great thing about this salad is that you can use leftover chicken or even leave out the chicken altogether. If you’re cooking your own chicken, I recommend spicing it with some cuminΒ as this adds a bit of a Mexican taste to it which is perfect combined with sweet mango. I’m a big fan of spring onions, so I chopped some up and added them to the pan with the chicken, sprinkled the lot with cumin and added a pinch of salt.
Once the chicken is ready, cut up your avocado and mango, then get them in a salad bowl with the juice of half a lime. Add your chicken, cooled down and cut into pieces, and your salad leaves. Finally, add a spoonful of honey and drizzle on some olive oil – done. I told you this was super easy!
This recipe has even been approved by the picky boyfriend, so it must be good! I know I’ll be making it again as it’s so quick and easy and makes a nice change from my usual go-to Greek salad. Do let me know if you try it!
